  Traditional Recipe

  Ingredients:

    For the Marinade:

  • 500 grams chicken pieces, bone-in and skinless
  • 1 cup plain curd
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon biryani masala, store-bought or homemade
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste

    For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 2-3 green cardamom pods
  • 1 bay leaf
  • 1 teaspoon caraway seeds
  • Salt to taste

    For the Biryani:

  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 cup fresh coriander leaves, chopped
  • 1 cup fresh mint leaves, chopped
  • 2 tablespoons ghee, Vegetable Oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/4 teaspoon saffron strands, soaked in 2 tablespoons warm milk,
  • Fried onions for garnish, (Optional)

 

  Instructions:

  1. Marinate the Chicken:

In a bowl, mix yogurt, ginger-garlic paste, suitable masala, turmeric, red chili powder, and salt.
Coat the chicken pieces with this mixture, cover, and refrigerate for at least 2 hours.

  2. Prepare the Rice:

Rinse the basmati rice until the water runs clear.
In a large pot, bring 4 cups of water to a boil with cardamom, bay leaf, caraway seeds, and salt.
Add the rice and cook until it is about 70% done. Drain and set aside.

  3. Cook the Chicken:

Heat ghee or oil in a large pot.
Add cumin seeds and let them sizzle.
Sauté onions till they turn a little brown then add the marinated chicken.
Cook the chicken until it turns brown and is well-cooked. Add tomatoes, green chilies, coriander powder, and garam masala.

  4. Layer the Biryani:

In the same pot, put a layer of half the partially cooked rice over the chicken mixture
Sprinkle half of the chopped coriander and mint leaves.
Now, put the remaining rice on top and sprinkle the remaining herbs.
Sprinkle some saffron milk over the rice, in case you are using it.

  5. Dum Cooking:

Tightly cover the pot. Cook for 20-25 minutes over low heat so that the flavours get infused properly into the rice.

  6. Garnish and Serve:

Gently fluff up the biryani and garnish with some fried onions, if desired.
Serve hot with raita, salad, or pickles.
